This slow cooker beef lasagne is a proper family favourite made a little differently — a rich, tomatoey beef bolognese with lasagne sheets stirred straight into the sauce, finished with a creamy homemade béchamel and golden melted cheddar.

Lasagne is one of those meals everyone in our house asks for, but the classic version — layering sheets, simmering sauce on the hob, baking it all in the oven — isn’t exactly a quick weeknight job. This slow cooker version gives you all that same rich, comforting flavour, but the slow cooker does the heavy lifting on the bolognese while you get on with the rest of your day.

Rather than layering the sheets in the traditional way, you break them up and stir them straight into the cooked bolognese along with a creamy homemade béchamel. It’s less fuss, less washing up, and honestly just as delicious — especially once it’s finished under the grill with a golden, bubbling layer of mature cheddar on top.

Ingredients

For the beef bolognese

  • 500g lean beef mince – the base of the sauce
  • 1 tbsp olive oil – for browning
  • 1 onion – finely diced
  • 1 large carrot – grated
  • 3 garlic cloves – finely chopped or crushed
  • 2 tbsp tomato purée – adds richness
  • 2 x 400g tins chopped tomatoes – the sauce base
  • 150ml beef stock – loosens the sauce
  • 1 tbsp Worcestershire sauce – savoury depth
  • 1 tsp dried oregano – classic Italian flavour
  • 1 tsp dried basil – extra herby flavour
  • 1 bay leaf – for gentle background flavour
  • Salt and freshly ground black pepper – to season

For the creamy béchamel

  • 40g butter – the base of the roux
  • 40g plain flour – thickens the sauce
  • 500ml milk – for a smooth, creamy sauce
  • Small pinch of ground nutmeg – a classic béchamel touch
  • Salt – to taste

To finish

  • 9–12 dried lasagne sheets – broken into smaller pieces
  • 75–100g mature cheddar – grated, for the golden topping
  • Fresh basil – to serve
  • Parmesan – optional, for serving

How to make slow cooker beef lasagne

1. Brown the beef

Heat the olive oil in a large frying pan over a medium-high heat.

Add the beef mince and cook for around 5–6 minutes, breaking it up with a wooden spoon, until browned.

2. Make the bolognese

Transfer the browned mince to your slow cooker.

Add the diced onion, grated carrot, garlic, tomato purée, chopped tomatoes, beef stock, Worcestershire sauce, oregano, basil and bay leaf.

Season with salt and plenty of black pepper, then give everything a good stir.

3. Slow cook

Cover with the lid and cook on HIGH for 2–2½ hours, until the beef is cooked through and the sauce has thickened and become rich and flavoursome.

4. Make the béchamel

While the bolognese is cooking, make the béchamel. Melt the butter in a saucepan over a medium heat.

Stir in the flour and cook for around 1 minute, stirring constantly.

Gradually whisk in the milk until smooth, then continue stirring for around 5–7 minutes until the sauce has thickened. Season with salt and add a small pinch of nutmeg. Set aside.

5. Add the lasagne sheets

Break the dried lasagne sheets into smaller pieces and add them directly to the cooked bolognese in the slow cooker. Give everything a good stir, making sure the pasta is coated in the sauce.

Pour in the béchamel and gently stir it through the lasagne and bolognese until everything is combined.

Replace the lid and cook for a further 10 minutes on HIGH, just until the pasta has started to soften and everything is hot and creamy.

6. Add the cheese

Remove the lid and sprinkle the grated mature cheddar evenly over the top.

Transfer the slow cooker insert to the grill only if it is specifically designed and approved for grill/oven use. Grill for around 10 minutes, or until the cheese is melted, bubbling and lightly golden.

If your slow cooker insert isn’t suitable for the grill, transfer the lasagne to an ovenproof dish before adding the cheese and grilling.

7. Finish and serve

Scatter over plenty of fresh basil and serve straight away. A little freshly grated Parmesan is optional if you fancy an extra cheesy finish.

My tips for the best slow cooker beef lasagne

Keep the bolognese fairly thick.
You don’t want an overly watery sauce before adding the pasta and béchamel. This gives you a much creamier finished lasagne.

Don’t overcook the pasta.
The broken lasagne sheets only need a short final cooking period in the slow cooker, so check them after 10 minutes. They should be tender but still have a little bite.

Use mature cheddar for the topping.
It gives you a lovely golden, savoury finish without needing mozzarella.

Make it extra cheesy.
Add a little grated Parmesan when serving if you like.

Can I make this ahead of time?

Yes. You can make the bolognese ahead of time and keep it covered in the fridge, then reheat it in the slow cooker before adding the pasta and béchamel.

The béchamel is best made fresh, as it can thicken and lose some of its silky texture if made too far ahead.

Can I freeze this lasagne?

Yes, the finished lasagne freezes well. Allow it to cool completely, then transfer to an airtight, freezer-safe container.

Defrost thoroughly in the fridge before reheating, and make sure it’s piping hot all the way through before serving.

A little nutrition

This is a lovely balanced family dinner, with protein from the beef, carbohydrates from the pasta, and calcium from the milk-based béchamel and cheese.

The chopped tomatoes contribute vitamin C and lycopene, and the grated carrot adds a little extra veg and fibre without anyone really noticing it’s there. Making your own béchamel also means you’re in control of how much salt goes in, compared with a shop-bought white sauce.

Yes, though fresh sheets will soften faster than dried ones, so keep a close eye on them during the final 10 minutes of cooking and check a little earlier.

Can I make this without a slow cooker?
