I put this on before the school run on a busy weeknight, and by the time we’re all home, starving and a bit frazzled, dinner practically makes itself. There are some meals that just feel like home, and this is definitely one of them.

I love a recipe that doesn’t need fancy ingredients or hours spent standing over the hob, and this slow cooker sausage and beans ticks all those boxes. It’s hearty, comforting and wonderfully simple, but making the baked beans from scratch takes it from an everyday sausage and beans dinner to something that feels a little more special.

Ingredients

For the sausage and homemade baked beans

  • 8 pork sausages – your favourite variety
  • 2 x 400g tins haricot beans – drained and rinsed
  • 1 large onion – finely sliced
  • 2 garlic cloves – minced
  • 2 x 400g tins chopped tomatoes – the sauce base
  • 2 tbsp tomato purée – adds richness
  • 2 tbsp Worcestershire sauce – savoury depth
  • 1 tbsp Dijon mustard – gentle warmth
  • 1 tbsp honey – balances the tomato sauce
  • 1 tsp smoked paprika – subtle smokiness
  • 1 tsp dried mixed herbs – extra flavour
  • 150ml chicken or vegetable stock – loosens the sauce
  • Salt and black pepper – to season
  • 1 tbsp olive oil – for browning the sausages

For the cheesy mash

  • 1–1.2kg Maris Piper potatoes – ideal for fluffy mash
  • 50g butter – makes the mash creamy
  • 100ml milk – for a smooth texture
  • 100g mature cheddar – for the golden topping
  • Salt and black pepper – to season

How to make slow cooker sausage and beans

1. Brown the sausages

Heat the olive oil in a large frying pan over a medium-high heat.

Add the sausages and brown them all over for around 5–7 minutes. They don’t need to be cooked through at this stage — we’re simply adding some lovely colour and flavour.

Remove them from the pan and set aside.

2. Make the homemade baked bean sauce

Using the same pan, add the sliced onion and cook for 3–4 minutes, until it starts to soften.

Add the garlic and cook for another minute.

Stir in the chopped tomatoes, tomato purée, Worcestershire sauce, Dijon mustard, honey, smoked paprika and dried herbs.

Pour in the stock and season with black pepper. Stir everything together.

3. Add everything to the slow cooker

Add the drained haricot beans to your slow cooker.

Pour over the homemade tomato sauce and give everything a gentle stir.

Nestle the browned sausages into the beans.

Cover and cook until the sausages are cooked through and the sauce has thickened.

LOW: 7–8 hours
HIGH: 4–5 hours

4. Make the mashed potato

Towards the end of the cooking time, prepare your potatoes.

Peel and chop the potatoes into evenly sized pieces, then place them in a pan of salted water.

Bring to the boil and cook for around 15–20 minutes, or until completely tender.

Drain well and return the potatoes to the warm pan.

Add the butter and milk, then mash until smooth and creamy. Season with salt and black pepper.

5. Assemble

Once the sausages and beans are ready, transfer the mixture to an ovenproof baking dish.

Spoon the mashed potato over the top and spread it evenly across the surface.

Finally, scatter over the grated mature cheddar.

6. Grill until golden

Place the dish underneath a hot grill for 5–10 minutes, or until the cheese is melted, bubbling and beautifully golden.

Keep a close eye on it — the cheese can go from golden to very brown quite quickly!

Serve hot and enjoy.

My tips for the best sausage and beans

Brown the sausages first.
You can technically add them straight to the slow cooker, but browning them first gives them much better colour and flavour.

Don’t skip the homemade bean sauce.
The combination of tomato, Worcestershire sauce, Dijon and honey gives the beans that lovely sweet, savoury and slightly tangy flavour.

Use Maris Piper potatoes.
They’re naturally fluffy and make wonderfully creamy mash.

Don’t make the mash too wet.
You want it thick enough to sit beautifully on top of the sausage and bean mixture.

Get the grill really hot.
A hot grill gives you that gorgeous bubbling, golden cheddar topping without needing to keep the whole dish in the oven for ages.

Can I make this ahead of time?

Yes. You can prepare the sausage and bean mixture ahead of time and keep it covered in the fridge.

You can also make the mashed potato ahead of time. When you’re ready to eat, assemble the dish, add the cheddar and grill until piping hot and golden.

If you’re reheating leftovers, make sure they are piping hot all the way through before serving.

Can I freeze sausage and beans?

Yes. The sausage and bean mixture freezes well.

Allow it to cool completely before transferring it to a suitable airtight container and freezing.

The mashed potato can also be frozen, although freshly made mash will give you the best texture for the final cheesy topping.

Defrost thoroughly in the fridge before reheating and make sure the dish is piping hot throughout.

Can I use different sausages?

Absolutely.

Pork sausages work particularly well here, but you could use Cumberland, Lincolnshire or herby sausages depending on what you have.

For a lighter version, you could also use reduced-fat pork sausages or chicken sausages.

What beans are best for homemade baked beans?

Haricot beans are my favourite for this recipe because they’re small, creamy and hold their shape well.

Cannellini beans would also work, although they’ll give you a slightly different texture.

What can I serve with sausage and beans?

Honestly, this dish is pretty complete on its own thanks to the beans, sausages and mashed potato.

If you want to add some vegetables, try:

  • Steamed broccoli
  • Tenderstem broccoli
  • Green beans
  • Peas
  • Roasted carrots

A simple green vegetable alongside it works particularly well with the rich tomato sauce and cheesy mash.

A little nutrition

I love recipes that are comforting and bring something nutritious to the table, and this one earns its place on a family dinner rotation.

A serving (based on 6 servings) works out at roughly 740 kcal, with 32g protein, 63g carbohydrates and 12.5g fibre — largely thanks to the sausages and the haricot beans, which are one of the better plant-based sources of fibre. The chopped tomatoes contribute vitamin C and lycopene, while Worcestershire sauce and Dijon mustard add flavour depth without much in the way of added sugar or salt compared with a shop-bought sauce.

Because the baked beans are made from scratch, you’re also in control of the sugar and salt content — most tinned baked beans carry more of both than you’d think. Adding a side of steamed greens is an easy way to boost the fibre and micronutrient content even further.

Store leftovers in an airtight container in the fridge for up to 3 days.

Reheat thoroughly until piping hot before serving.

If you’ve already assembled and grilled the dish, the cheesy topping may soften slightly when reheated, but you can pop it back under the grill for a few minutes to crisp it up again.

Can I put raw sausages straight into the slow cooker?

Yes, but I recommend browning them first. It adds much more flavour and gives the sausages a better colour.

Can I make this without a slow cooker?

Yes. The sausage and bean mixture can be cooked gently in a large casserole or saucepan on the hob until the sauce has thickened and the sausages are cooked through. You can then add the mash and cheddar and finish under the grill.

Can I use tinned baked beans instead?

You can, but the homemade baked beans are what make this recipe different. The tomato sauce is really simple to make and gives you a richer, more savoury flavour.

Can I add vegetables to the beans?

Definitely. Finely diced carrots, peppers or celery would all work well in the tomato sauce. It’s also an easy way to add extra vegetables to a family meal.

Instructions

  • Brown the sausages in olive oil for 5–7 minutes. Remove and set aside.
  • Soften the onion in the same pan for 3–4 minutes. Add the garlic and cook for 1 minute.
  • Add the chopped tomatoes, tomato purée, Worcestershire sauce, Dijon, honey, smoked paprika, herbs and stock. Season and stir.
  • Add the haricot beans to the slow cooker and pour over the tomato sauce.
  • Nestle the sausages into the beans.
  • Cook on LOW for 7–8 hours or HIGH for 4–5 hours.
  • Towards the end of cooking, boil the potatoes for 15–20 minutes until tender. Drain and mash with butter and milk. Season.
  • Transfer the sausage and bean mixture to an ovenproof dish.
  • Top with the mashed potato and sprinkle over the grated cheddar.
  • Grill for 5–10 minutes, until bubbling and golden.

Notes

Slow cooker: Cook on HIGH for 4–5 hours or LOW for 7–8 hours, until the sausages are cooked through and the beans are rich, thick and flavoursome.
For the best finish, prepare the cheesy mash separately and spoon it over the sausage and beans just before serving. Finish under a hot grill until the cheese is melted, bubbling and golden.
