How to make creamy slow cooker sausage and butter bean stew

1. Brown the sausages

Add the onion, carrots, celery and garlic to the slow cooker, followed by the butter beans.

3. Make the sauce

4. Slow cook

Cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the vegetables are tender and the sausages are cooked through.

5. Make it creamy

About 10–15 minutes before serving, stir in the fromage frais and spinach. Leave the lid on until the spinach has wilted.

6. Thicken naturally

For a thicker, creamier sauce, gently mash a few of the butter beans against the side of the slow cooker and stir them through.

Tips for the best sausage and butter bean stew

James & Thyme tip: Don’t worry if the stew looks slightly loose before adding the fromage frais. The butter beans will naturally thicken the sauce as you mash a few through at the end.

Brown the sausages properly. A good colour on the outside adds a lot of flavour to the finished stew — don’t rush this step.

Add the spinach last. It only needs a few minutes with the lid on to wilt down, so stir it in right at the end.

Can I use a different bean?
