Equipment

Ingredients

  • 6 chunky sausages
  • 1 large onion diced
  • 2 carrots peeled and sliced
  • 2 celery sticks sliced
  • 2 garlic cloves finely chopped
  • 570g jar butter beans drained and rinsed
  • 500 ml chicken stock
  • 1 tbsp Dijon mustard
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tbsp Worcestershire sauce
  • ½ tsp black pepper
  • 100 ml fromage frais
  • 2 large handfuls fresh spinach
  • 1 tbsp olive oil for browning

Instructions

  • Heat the olive oil in a large frying pan and brown the sausages all over. Transfer to the slow cooker.
  • Then add the onion, carrots, celery and garlic to the slow cooker, followed by the butter beans.
  • Pour in the chicken stock and add the Dijon mustard, thyme, rosemary, Worcestershire sauce and black pepper. Stir well.
  • Cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the vegetables are tender and the sausages are cooked through.
  • About 10–15 minutes before serving, stir in the fromage frais and spinach. Leave the lid on until the spinach has wilted.
  • For a thicker sauce, gently mash a few butter beans against the side of the slow cooker and stir through.

Notes

  • Brown the sausages first for extra flavour, but this can be skipped if you're short on time.
  • Mash some of the butter beans into the sauce to naturally thicken the stew.
  • For a vegetarian version, you'd need to replace the sausages, chicken stock and Worcestershire sauce with suitable alternatives.
