  • 1 cup cherry tomatoes, halved
  • 1 cup sweetcorn

How To Make BBQ Chickpea Salad

Step 1: Prepare the Sweetcorn

Cook the sweetcorn according to packet instructions. If using corn on the cob, carefully slice the kernels away once cooked.

Step 2: Chop the Fresh Ingredients

Chop the romaine lettuce, cherry tomatoes, cilantro, avocado, and red onion into bite-sized pieces.

Step 3: Cook the BBQ Chickpeas

Pat the chickpeas dry with kitchen paper, then toss them with the BBQ sauce until evenly coated.

Roast or air fry at 200°C (400°F) for around 10 minutes until slightly crispy and caramelised.

Step 4: Crush the Tortilla Chips

Lightly crush the tortilla chips into smaller pieces for extra crunch throughout the salad.

Step 5: Assemble the Salad

Add the lettuce, tomatoes, sweetcorn, cilantro, onion, avocado, and tortilla chips to a large serving bowl.

Top with the warm BBQ chickpeas, drizzle over the ranch dressing, and gently toss everything together before serving.
