Equipment

Ingredients

  • 8 pork sausages
  • 800 g haricot beans drained and rinsed
  • 1 large onion finely sliced
  • 2 garlic cloves minced
  • 800 g chopped tomatoes
  • 2 tbsp tomato purée
  • 2 tbsp Worcestershire sauce
  • 1 tbsp Dijon mustard
  • 1 tbsp honey
  • 1 tsp smoked paprika
  • 1 tsp dried mixed herbs
  • 150 ml chicken or vegetable stock
  • 1 tbsp olive oil
  • Salt and black pepper

For the mash

  • 1-1.2 kg Maris Piper potatoes
  • 50 g butter
  • 100 ml milk
  • 100 g mature cheddar grated
  • Salt and black pepper

Instructions

  • Brown the sausages in olive oil for 5–7 minutes. Remove and set aside.
  • Soften the onion in the same pan for 3–4 minutes. Add the garlic and cook for 1 minute.
  • Add the chopped tomatoes, tomato purée, Worcestershire sauce, Dijon, honey, smoked paprika, herbs and stock. Season and stir.
  • Add the haricot beans to the slow cooker and pour over the tomato sauce.
  • Nestle the sausages into the beans.
  • Cook on LOW for 7–8 hours or HIGH for 4–5 hours.
  • Towards the end of cooking, boil the potatoes for 15–20 minutes until tender. Drain and mash with butter and milk. Season.
  • Transfer the sausage and bean mixture to an ovenproof dish.
  • Top with the mashed potato and sprinkle over the grated cheddar.
  • Grill for 5–10 minutes, until bubbling and golden.
  • Serve hot with your favourite green vegetables and enjoy this proper bowl-of-comfort kind of dinner.

Notes

Slow cooker: Cook on HIGH for 4–5 hours or LOW for 7–8 hours, until the sausages are cooked through and the beans are rich, thick and flavoursome.
For the best finish, prepare the cheesy mash separately and spoon it over the sausage and beans just before serving. Finish under a hot grill until the cheese is melted, bubbling and golden.
