Millet — a naturally gluten-free grain that becomes soft and creamy when cooked, creating the perfect pudding texture.

Unsweetened almond milk — helps cook the millet while keeping the pudding light and dairy-free. You can use another milk alternative if preferred.

Raspberries — add natural sweetness, vibrant colour and a delicious fruity flavour. Fresh or frozen raspberries both work well.

Vanilla protein powder — adds protein and creates a dessert-like vanilla flavour. Use your favourite protein powder brand.

Extra raspberries and maple syrup (optional) — perfect for serving and adding a little extra sweetness if desired.

What You Need to Do

  1. Divide between two bowls or jars and serve immediately, or chill in the fridge until ready to enjoy. Top with extra raspberries and a drizzle of maple syrup if desired.
  2. Place the millet into a fine mesh strainer and rinse thoroughly under cold running water. This helps remove any bitterness and gives the pudding a cleaner flavour.
  3. Transfer the rinsed millet to a saucepan and pour in the almond milk. Bring to a gentle boil, then reduce the heat, cover with a lid and simmer for around 15 minutes until the millet is soft and has absorbed most of the liquid.
  4. Transfer the cooked millet to a high-speed blender or food processor. Add the raspberries and vanilla protein powder, then blend until smooth and creamy.
  5. If the pudding feels too thick, add a splash of extra almond milk until you reach your preferred consistency.
