Vanilla Coconut Truffles (Easy No Bake Treat)

Ingredients

Makes 10 truffles

Desiccated coconut — the main ingredient that gives these truffles their chewy texture and delicious coconut flavour. Use unsweetened coconut where possible.

Coconut milk — canned coconut milk adds richness and helps bind the mixture together. Use the thick creamy part for an extra indulgent texture.

Coconut oil — helps the truffles firm up once chilled while adding a lovely coconut flavour.

Vanilla extract — adds warmth and enhances the natural sweetness of the coconut.

Maple syrup — provides gentle sweetness while keeping these truffles naturally sweetened.

Extra desiccated coconut — used for rolling the finished truffles and adding a pretty coconut coating.

What You Need to Do

  1. Add the coconut oil and canned coconut milk to a small saucepan and gently heat over low heat until warmed through. Avoid boiling — you only want the ingredients softened and combined.
  2. Remove from the heat and stir in the desiccated coconut, vanilla extract and maple syrup. Mix well until everything is evenly combined.
  3. Transfer the mixture into a container and place in the fridge for around 1 hour, or until firm enough to roll.
  4. Once chilled, scoop out the mixture and roll into approximately 10 small balls using your hands.
  5. Roll each truffle in extra desiccated coconut, then enjoy immediately or store in the fridge until ready to eat.

Adjust the texture: If your mixture feels too dry and won’t roll into balls, simply add a little extra coconut milk until it comes together.

Make them chocolatey: Add 1–2 tablespoons of cocoa powder for a chocolate coconut version.

Add crunch: Mix through finely chopped almonds, hazelnuts or cacao nibs for extra texture.

Boost the flavour: A pinch of sea salt makes the coconut and vanilla flavours stand out even more.

Ingredients

  • 2 cups (200g) desiccated coconut, plus extra for rolling
  • ¼ cup (60ml) canned coconut milk
  • ¼ cup (50g) coconut oil
  • ½ tsp vanilla extract
  • 3 tbsp maple syrup

Instructions

  • Gently heat the coconut oil and coconut milk in a saucepan over low heat.
  • Add the desiccated coconut, vanilla extract and maple syrup. Mix until combined.
  • Transfer to a container and chill in the fridge for 1 hour.
  • Roll the chilled mixture into approximately 10 balls.
  • Coat each truffle in extra desiccated coconut and serve.
