How to Make Almond & Peach Cake
Step 1

Gradually add the almond milk and maple syrup, then mix in the lemon juice and vanilla extract.

In a separate bowl, combine the flour, almond meal, baking powder, baking soda, cinnamon and ginger.

Fold the dry ingredients into the wet ingredients until just combined.

Transfer the batter into the prepared cake tin and arrange the peach slices over the top.

- 1 tbsp lemon juice
- 2 tsp vanilla extract
- 2 peaches sliced
- 240 g plain flour
- 80 g almond meal
- 1 tsp baking powder
- ½ tsp baking soda
- 2 tsp cinnamon
- 3 tsp ground ginger
Instructions
- Preheat oven to 180°C (355°F) and prepare a cake tin.
- Whisk almond butter and yoghurt together.
- Add almond milk, maple syrup, lemon juice and vanilla.
- Mix flour, almond meal, baking powder, baking soda and spices.
- Fold dry ingredients into wet ingredients.
- Add batter to the tin and top with peach slices.
