Flax Eggs
Flax eggs work as a plant-based egg replacement, helping bind the brownies together.
Almond Meal
Almond meal gives these brownies a soft texture while keeping them naturally gluten-free.
Coconut Palm Sugar
Adds a delicious caramel-like sweetness while being less processed than regular white sugar.
Walnuts

How To Make Vegan Chocolate Brownies
Step 1: Prepare Your Baking Tin
Preheat your oven to 175°C (350°F).
Line an 8×8 inch baking tin with baking paper.
Step 2: Melt The Chocolate
Add the chopped dark chocolate and coconut oil into a heatproof bowl.
Place over a saucepan of gently simmering water and stir until completely melted and smooth.
Step 3: Prepare The Brownie Batter
Mash the ripe avocados in a large mixing bowl.
Add the melted chocolate mixture and stir well.
Whisk in the coconut sugar, flax eggs and vanilla extract until combined.
Step 4: Add The Dry Ingredients
Add the almond meal, cocoa powder, baking powder and sea salt.
Mix gently until just combined — avoid overmixing as this can affect the texture.
Fold through the chopped walnuts.
Step 5: Bake
Spread the brownie mixture evenly into your prepared tin.
Bake for 25–30 minutes, until the centre is set.
Allow the brownies to cool completely before slicing into squares.

How To Make A Flax Egg
A flax egg is an easy vegan substitute for a traditional egg.
To make one flax egg:
- Mix 1 tablespoon ground flaxseed with 2½ tablespoons water
- Leave for 5 minutes until it thickens into a gel-like consistency
For this recipe you’ll need 2 flax eggs.
Tips for the Best Vegan Chocolate Brownies
Use ripe avocados
Choose soft, ripe avocados for the smoothest texture. The avocado should blend easily without any stringy pieces, helping create that rich, fudgy brownie centre.
Don’t overbake the brownies
For the fudgiest texture, remove the brownies once the centre is just set. Overbaking can make them dry rather than soft and chocolatey.
Allow them to cool fully before slicing
These brownies continue to set as they cool. Waiting until they are completely cool will give you cleaner slices and a richer texture.
Use good quality dark chocolate
Because chocolate is the main flavour, using a good quality dark chocolate (70% cocoa or higher) makes a big difference to the final taste.

- 3 tbsp coconut oil
- 2 ripe avocados
- 200 g coconut palm sugar
- 2 flax eggs
- 1 tsp vanilla extract
- 75 g almond meal
- 30 g unsweetened cocoa powder
- ½ tsp baking powder
- ½ tsp sea salt
- 50 g walnuts chopped
Instructions
- Preheat your oven to 175°C (350°F).
- Line an 8×8-inch baking tin with baking paper.
- Add the chopped dark chocolate and coconut oil to a heatproof bowl. Place the bowl over a saucepan of gently simmering water and stir until the chocolate and coconut oil have completely melted and combined.
