Some mornings call for a proper cooked breakfast, and some mornings call for something that takes five minutes flat because everyone’s shouting for shoes and nobody can find a school jumper. This one’s become my go-to on those chaotic days — it feels like I’ve made an effort even when I really haven’t. It’s become one of my go-to easy breakfasts on the busiest mornings, right alongside my high-protein breakfast smoothie which is another five-minute lifesaver.

Ingredients
Serves 2
Salt and pepper — to season to taste
Wholemeal bread — a hearty base that toasts up perfectly crisp
Avocado — creamy and rich in healthy fats
Feta cheese — adds a salty, tangy bite
Pomegranate seeds — for a juicy pop of sweetness and colour
Mint leaves — a fresh, fragrant garnish
What You Need to Do
1. Toast and mash. Toast the bread to your liking. Remove the avocado flesh and mash it with a fork, seasoning with salt and pepper.
2. Assemble and serve. Divide the mashed avocado between the two slices of toast. Crumble the feta on top and scatter over the pomegranate seeds. Garnish with mint leaves and serve immediately.
Tips & Variations
- Make it gluten-free by using your favourite gluten-free bread.
- No pomegranate? Try it with cherry tomatoes for a different flavour twist.
- Swap the feta for goat’s cheese if you prefer something creamier. (Looking for more ways to boost the protein here? Try adding a boiled egg on the side, or check out my high-protein dinner recipes for ideas you can apply to lunch and dinner too.)
- Add a drizzle of honey or a pinch of chilli flakes for extra flavour.

Frequently Asked Questions
Can I make this ahead of time? This one’s best assembled just before eating, as avocado browns quickly. You can toast the bread and prep the pomegranate seeds ahead of time to speed things up in the morning.
Is this recipe healthy? Yes — avocado provides healthy monounsaturated fats, feta adds protein and calcium, and pomegranate seeds bring antioxidants and a lovely pop of natural sweetness. For more nutrient-dense options like this, take a look at my favourite salad recipes — they follow the same simple, whole-food approach.
Can I use a different type of bread? Absolutely. Sourdough or rye both work beautifully here if you want to switch things up.
Ingredients
- 2 slices wholemeal bread
- 1 avocado
- ¼ cup (50g) feta cheese crumbled
- ¼ pomegranate seeds
- mint leaves to garnish
Instructions
- Toast the bread to your liking. Remove the avocado flesh and mash it up with a fork, season with salt and pepper.
- Divide the avocado between the 2 slices of toasted bread. Crumble the feta cheese on top and sprinkle with pomegranate seeds. Garnish with mint leaves and serve.
Notes
- Best served immediately, as avocado can brown quickly once cut.
- If prepping ahead, keep the avocado mash covered with cling film pressed directly onto the surface, and add a squeeze of lemon juice to slow browning.
- Leftover pomegranate seeds freeze well — spread on a tray to freeze individually, then store in a bag for smoothies or salads.
