How to Make Healthy Banana Honey Muffins
Step 1
Preheat your oven to 180°C (160°C fan) and line a 12-hole muffin tin with paper cases.
Step 2
Mash the bananas until mostly smooth.
Step 3
Add the eggs, honey, Greek yogurt, milk and vanilla extract. Whisk until combined.
Step 4
Add the self-raising flour, flaxseed and cinnamon. Fold everything together gently until no dry flour remains. Be careful not to over-mix.


Step 5
Divide the batter evenly between the muffin cases, filling each around three-quarters full.


Step 6
Bake for 18–22 minutes, or until golden and a skewer inserted into the centre comes out clean.
Step 7
Allow the muffins to cool in the tin for 5 minutes before transferring to a wire rack.
