Made with just fresh watermelon, lime juice and a little honey, it’s naturally sweet, incredibly refreshing and tastes like summer in every spoonful. Ingredients
Watermelon
Choose a ripe, sweet watermelon for the best flavour. Freezing the watermelon beforehand creates the perfect sorbet texture without needing lots of added sugar.
Lime Juice
Fresh lime juice balances the sweetness beautifully and makes the watermelon flavour pop.
Honey
A little honey enhances the natural sweetness and helps keep the sorbet slightly softer after freezing.
How to Make Watermelon Sorbet
Step 1
Cut the watermelon into cubes and freeze them on a lined baking tray for at least 4 hours, or overnight.

Step 2
Grate the frozen watermelon using a steel grater over a bowl, (you could also use a blender to make your sorbet).

Step 3
Add the fresh lime juice and honey.

Step 4
Serve immediately for a soft-serve consistency, or transfer to a freezer-safe container for 1-2 hours if you’d like firmer scoops.
Tips & Variations
Add Fresh Mint – Blend in a few mint leaves for an extra refreshing twist.
Berry Watermelon Sorbet – Add a handful of frozen strawberries or raspberries.
Tropical Version – Blend with frozen mango or pineapple.
Coconut Water – Replace some of the lime juice with coconut water for a tropical flavour.

Can I make watermelon sorbet without an ice cream maker?
Absolutely. This recipe doesn’t require one at all. A grater, food processor or high-speed blender does all the work.
Can I use bottled lime juice?
Fresh lime juice gives the best flavour, but bottled works if that’s all you have.
Is watermelon sorbet healthy?
Compared to many frozen desserts, yes. It’s made mostly from fruit with just a small amount of honey for sweetness.
Can I make it vegan?
Yes. Simply swap the honey for maple syrup or agave nectar.
Why is my sorbet icy?
This usually happens if it has been frozen for several days. Let it soften slightly before serving, or blend it again for a smoother texture.

- 2 tbsp Honey
- 1 Fresh lime juice
Instructions
- Freeze watermelon slices/ cubes for at least 4 hours.
- Add frozen watermelon, lime juice and honey to a food processor, or you can use a steel grater.

- Serve immediately for soft sorbet or freeze for 1-2 hours for firmer scoops. Garnish with fresh mint or lime zest if desired.
Notes
- Store in an airtight freezer-safe container for up to 2 months.
- Because this sorbet contains very little added sugar, it freezes quite firmly. Leave it on the kitchen counter for 5-10 minutes before scooping.
