It’s one of those recipes that’s comforting enough for a cosy evening but still packed with nourishing wholefoods that leave you feeling great afterwards.

Ingredients

Chicken Thighs

Boneless, skinless chicken thighs stay incredibly juicy and tender while simmering in the curry sauce.

Onion

Creates the sweet, savoury base of the curry.

Garlic

Fresh garlic adds richness and depth.

Fresh Ginger

Adds warmth and freshness that dried ginger simply can’t match.

Mild Curry Powder

The main flavour of the curry, keeping it family-friendly without being overly spicy.

Ground Cumin

Adds a warm, earthy flavour.

Ground Turmeric

Gives the curry its beautiful golden colour while adding subtle earthy notes.

Coconut Milk

Makes the curry creamy and balances the spices beautifully.

Baby Spinach

A simple way to add extra vegetables and colour.

Mango Chutney (trust me!)

Optional, but adds a gentle sweetness that balances the spices perfectly.

Lime Juice

Brightens the whole curry at the end.

How To Make Easy Healthy Chicken Curry

Step 1

Heat the olive oil over a medium-high heat. Season the chicken thighs with salt and pepper before adding them to the pan. Cook for around 5–6 minutes until browned all over. Remove and set aside.

Step 2

Reduce the heat slightly and cook the onion until softened, around 5 minutes. Stir in the garlic and ginger and cook for another minute.

Step 3

Add the curry powder, cumin and turmeric, stirring continuously for around 30 seconds until fragrant.

Step 4

Stir in the tomato purée before adding the chopped tomatoes, coconut milk and chicken stock. Mix well.

Step 5

Return the chicken to the pan. Simmer gently for 20–25 minutes until the chicken is cooked through and the sauce has thickened.

Step 6

Stir through the spinach until wilted before adding the mango chutney and lime juice. Taste and season if needed.

Step 7

Scatter over fresh coriander and serve with fluffy basmati rice and a spoonful of natural yoghurt.

Storage

Store leftovers in an airtight container in the fridge for up to 3 days.

Freeze for up to 3 months.

Defrost overnight before reheating thoroughly.

Ingredients

  • 600 g boneless skinless chicken thighs, cut into bite-sized pieces
  • 1 tbsp olive oil
  • 1 large onion finely diced
  • 3 garlic cloves minced
  • 1 tbsp fresh grated ginger
  • 2 tbsp mild curry powder
  • 2 tsp ground cumin
  • 1 tsp turmeric
  • 400g chopped tomatoes
  • 400 ml coconut milk
  • 150 ml chicken stock
  • 1 tbsp tomato purée
  • 2 large handfuls baby spinach
  • 2 tbsp mango chutney optional, but I LOVE this in it
  • Juice of ½ lime
  • Salt & black pepper
  • Fresh coriander to serve

Instructions

  • Heat the oil in a large pan over medium-high heat. Season the chicken thighs with salt and pepper and cook for 5–6 minutes until nicely browned. Remove and set aside.
  • Add the onion to the same pan and cook for 4–5 minutes until softened. Add the garlic and ginger and cook for another minute.
  • Stir in the curry powder, cumin and turmeric. Cook for about 30 seconds — this helps release all those lovely spices.
  • Add the tomato purée, chopped tomatoes, coconut milk and chicken stock. Stir everything together.
  • Add the chicken back to the pan. Bring to a gentle simmer and cook uncovered for 20–25 minutes, stirring occasionally, until the chicken is tender and the sauce has thickened.
  • Stir through the spinach until wilted, then add the mango chutney and lime juice. Taste and season.
  • Serve with basmati rice and finish with fresh coriander and another squeeze of lime.

Notes

  • Brown the chicken properly—those caramelised bits add loads of flavour.
  • Don’t boil the curry rapidly. A gentle simmer keeps the chicken beautifully tender.
  • Taste before serving. A squeeze of lime right at the end completely lifts the flavours.
  • If you like a thicker curry, simmer uncovered for an extra 5 minutes.
